Easy Pancakes


1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 egg
3 tablespoons butter, melted

In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

Chicken Enchiladas

Tortillas
2 onions (caramelize in slow cooker for 10 hours with a little olive oil)
Chicken breast (make shredded chicken in slow cooker: salt and pepper chicken breasts, cover in about 4 cups broth, cook for 4 hours on high or 6 on low)
*SEASON the chicken to prep for enchiladas
1 jalapeƱo
Can(s) of green enchilada sauce
Block of sharp cheddar
Block of monterey jack
Can of sliced olives
Taco seasonings for chicken
Avocado for topping
Sour cream for topping
1 bunch cilantro for topping?

Bake at 350, check at 15 min
